“Nez éloigné de nos repères de Foursquare : fruits secs grillés, miel-cassonade, banane flambée, eucalyptus et bois brûlé. L’alcool est présent mais invite à la dégustation. L’attaque en bouche est franche et surprenante. La crème brûlée est la, du boisé, du poivré mais surtout un profil fumé inhabituel de la distillerie. La finale est agréable et longue mais moins surprenante que la 1ère bouche. Avec en finale du cacao et du menthol. Est-ce le fait qu’il s’agit d’une sélection 100% pot still, d’un passage dans un fût typé (non mentionné) ou … mais ce profil est très différent de nos repères. On dit souvent, un foursquare est un foursquare. Je vous invite à le gouter, vous ne direz plus jamais cela avec ce profil fumé qui lui va bien ! Il a un comme un profil de certains Demerara. Moi j’aime bien !”
